Making a strawberry dessert on Valentine’s Day is a great way to say “I love you” so check out modXchange’s favorite profiterole recipe:
- 1/2 cup flour
- 4 tbsp butter
- pinch of salt
- 3 large eggs
- 1 large egg white
- 1/2 cup whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 cup strawberries
Preheat the oven to 350 degrees and line two baking sheets with parchment paper. Mix the butter, salt and 1/2 cup water in a pan, and cook until the butter is melted. Add flour, and cook while stirring it about 5 minutes.
Add the eggs and beat them until the pastry becomes smooth. Put the pastry to a pastry bag with a coupler and squeeze 1 tablespoon of the pastry onto the baking sheet and continue until all the pastry is used. Make sure that puffs are about 1 1/2 inches apart.
Bake for 30 minutes, or until the puffs are golden. Once they are completely cool, slice them diagonally, and leave aside.
To prepare the filling combine whipping cream, powdered sugar and vanilla extract. Beat with the mixer for about 3 minutes, or until mixture becomes solid. Place a few slices of strawberries and a spoonful of whipped cream into each puff.
Serve chilled and top with melted chocolate.
