eggs en cocotte

There are only few days left until Valentine’s Day and if you wish to make a very special meal, think about breakfast – in bed! Eggs baked inside individual containers with just a bit of cream and butter is a classic French dish. It looks very stylish, tastes delicious and makes a fantastic Valentine’s Day breakfast. If you want to make it a bit more interesting, you can add other ingredients such as vegetables, tomato, Parmesan cheese and different herbs. Check out our favorite recipe for eggs en cocotte:

  • 2 tsp of unsalted butter
  • 4 eggs
  • 4 tsp of heavy cream
  • 4 tsp of grated Parmesan cheese
  • 1 tsp of freshly grounded pepper
  • 1 tsp of salt
  • ½ cup of finely chopped fresh herbs – parsley or chives

Pre-heat the oven to 180C. Put 1 tsp of butter and 1 tsp of cream in each ramekin. Gently break 2 eggs into each ramekin, season with salt and pepper and sprinkle cheese and herbs. Drizzle the eggs with cream and bake for 10-15 minutes. Make sure not to overcook the eggs because yolks should be soft. Serve with toast on the side.
