Healthy Breakfast: Blueberry Pancakes with Coconut Flour

Sunday is the perfect day for pancakes, but it doesn’t have to be a guilty pleasure! If you make them with coconut flour and milk they will be gluten-free and grain-free, which makes it a healthy and yet very tasty meal. Considering that there is no sugar either, it is also completely guilt-free. This recipe is very simple and preparation takes only about 15 minutes:

INGREDIENTS:

  • 4 eggs
  • 1 cup of coconut milk
  • ½ cup of coconut flour
  • 1 teaspoon of baking soda
  • pinch of salt
  • 1 tablespoon of vanilla extract
  • 1 cup of blueberries
  • coconut oil for frying
  • maple syrup

PREPARATION:

Whisk eggs and then pour milk and vanilla extract. Add flour, baking soda and a pinch of salt and stir well. Put blueberries at the center of each pancake. Bake for 2-3 minutes on medium heat, flip and then cook for 1 more minute. Serve with maple syrup.
